Fun with Family

I was bad...went to Krispy Kreme. I normally don't care for donuts, but this baby inside me likes the chocolate iced cream filled ones. ;-)

We had family come in last weekend from Arkansas. It was Landon's brother, sister in law and their five wonderful children. We had a great time showing them around Franklin, Tn. Greyson really liked having kids to play with too! Here are some pics from our visit...

pics from this week

This kid loves his black beans & rice.
Ok enough mom, i just wanna eat!

Reading his favorite book, its his favorite cause it lights up.

He kept climbing on the couch exactly where Landon was vacuuming, haha.
Wrestling on the floor with Daddy. He kept taking landon's hat off and on.
He transported his basket of toys into our bedroom, plus he added some laundry to the pile as well.

Packing Peanuts?!

So who knew packing peanuts were cool and a lot of fun? Not me. I have always thought they were annoying and I still do, especially after this afternoon. Well I bought a breastpump on ebay and it came in today, very exciting, to me at least cause its a good pump! haha Anyways, the really exciting part came after I opened it and Greyson found the peanuts were good for playing with. Here he is having a ball with this huge box of peanuts. It occupied him for over an hour!

Sugar found that the bubble wrap makes a great pillow.
My favorite pic, juts chilling in some peanuts.

How can I be so completely adorable?!

This looks yummy...

Cleanup time for mommy.

Life is Beautiful

This last week, we've struggled with getting Greyson to take his nap each day. He just whines or continuously gets out of his bed and roams his room for a couple hours till nap time is up. Its been frustrating because all our hard work in training him to stay in his toddler bed has pretty much been void, its like we're starting over. I am definately at my wits end because seems like the good advice I get just doesn't work with Greyson even though we are consistent to the T. Its like he's the exception to most rules, haha! Well today was day 6 of no nap and about 1 1/2 hour into it, he still wasn't asleep but was exhausted because he hadn't slept good last night. I decided to just rock him and he was asleep within 5 minutes. I just layed down in his bed with him and he snuggled up to me for his entire nap. It was the most precious thing so be able to cuddle with my baby for so long. He's growing up so fast so these moments are getting fewer as he gets older and more independent. I love my little boy so much, even when he's strong willed and stubborn. I know he may not be the typical kid but thats ok with me. I am willing to put forth the extra effort in figuring him out :)

Great 28th Birthday!

Well yesterday was my 28th birthday! I don't feel 28 at all. It was a great one though. Sunday afternoon we went to Scott and Pam's house to hang out and Landon told me he had to go help out with the youth worship (which he has started doing) so I didn't think anything of it. The plan was he would come back around 730 and hang out with us all. So around 6, he shows up with a beautiful cake from Julia's Homestyle Bakery (love that place) and sang to me. I was actually very surprised!!! Its really hard to surprise me cause i figure things out easily. It was so sweet, he drove all the way to Murfreesboro to get the cake. We had a great time hanging out that night. Last night I went out with my friend Leah and we went to my favorite Thai restaurant, Jasmine here in Franklin. We saw Melinda Dolittle from American Idol there too! We went to see the movie "My life in ruins" which is by the girl who wrote "My big fat greek wedding". It was really funny and cute. So we had a great time. I am so thankful for my wonderful thoughtful, sweet husband and for great friends like Leah to make my life so full. I am so blessed to have had 28 years on this earth.

Olivia's Wedding

Last Friday, I had the honor of being a bridesmaid in my friend Olivia's wedding. It was at Cedarwood in Nashville and it was spectacular! It was by far the prettiest wedding I've ever been to. Olivia and Quinn are a perfect match and I wish them all of God's blessings in their marriage. We had a lot of fun dancing to great music and hanging out with fun people from Seattle, New York and Washington D.C. Here is a pic of us bridesmaids with Olivia that the photographer just released as a sneak preview but there will be lots more to come. I am thinking of using this photographer when Greyson turns 2.

Greyson and Brett

I am selling my mom's vacuum for her and we wanted to try out a famous "rainbow"...Greyson is mommy's big helper! He loves to clean. :)

Today my mom came with my nephew Brett. Greyson loves him!

Brett put this bucket on Greyson's head and he liked it! he was smiling. We went to the park and let them play, they had a great time. It was so hot today!!!

An interesting day

Yesterday was a fun day despite some bad news from my doctor who said the treatments on my spinal disc damage wasn't working and he couldn't explain why. He said he had never seen someone not respond to the intense treatments I've been undergoing. Obviously I was upset after all the time and money and hope spent. He referred me to pain management where he said injections were my next step. But me being me, I am still hoping something more natural will help so I am going to try accupuncture starting in July with an actual Chinese accupunturist in Franklin. Of course, if that doesn't work then its off to pain management. Please keep me in your prayers for healing because being pregnant and dealing with chronic constant severe pain takes an emotional and physical toll on me. I am trying to keep my hope and faith alive though.

Greyson and I went to Murfreesboro and visited some friends, spent breakfast with my friend Sarah and her son Elias (the genius 19 month old who speaks clear 6 word sentences!). We let the boys play at the play area in the mall after that. It was fun trying to keep up with our active boys.

After that I went to visit my friend Amanda for a few minutes, wished I could've stayed longer but I had a lunch date with my Aunt Jama and cousin Carlee. They watch Greyson for us sometimes so we can go on dates. Greyson loves them too! We ate lunch at Newk's and it was awesome as always! We also saw another friend of mine from church there, Emily Day, which was a nice surprise!

Then last night we went to Buca de Bepo for dinner with our friends Pam and Scott Burnham (and their three kids). We had a large group and it was loud but fun. Mostly Greyson was loud cause he hadn't had a nap and it was such a busy day, he was so exhausted but eventually we finished the meal. They brought out some yummy cake and sang happy birthday to me even though my birthday isn't till June 15th. Thats ok, i love cake. We went back to our house to hang out with them for a bit and watched the new Hillsong worship DVD which I won on Wayfm with some tickets to their concert tonight! I am so excited to go!!!!!

Here are a couple pics of me and Pam from last night.

Two pregnant friends: Pam is due Nov 3 and I'm due Jan 2nd

Memorial day weekend!

We had a great weekend and on Memorial Day we got to spend time with my mom and stepdad in Adams, TN. Mom grilled out chicken, hamburgers and hotdogs and I made the buns and a homemade banana pudding. Here are a couple pics of me and my mom. We have very few of us together so we made an effort to take a couple this time!

Here is Greyson playing in my mom's kitchen. He liked the slickness of the floor. haha

Greyson playing at the table. He loves bananas!

This was on Thursday when I caught Greyson reading instead of sleeping, all I did was open that door and he started crying. It was pitiful. I guess he didn't like getting caught.
This is our dog Sugar sleeping on the couch, just thought it was a funny way to sleep. She had been looking out the window and just fell asleep doing it.
Also this weekend, we went to my step brothers graduation at Ezell Harding Christian School! We are so proud of you Wes!!! We went to eat at Chili's afterwards and spent time with family. We don't see them often so it was good to see everyone. Wes is going to MTSU for Criminal Justice.
We also went to church Sunday and I had to have my bridesmaid dress altered. I am in my friend Olivia's wedding on June 5th at Cedarwood, its gonna be a beautiful wedding! Landon and I will be staying at the Renaissance Hotel that night after the wedding since I have family watching Greyson. We figured it would be a good opportunity to have some alone time. This will be our first night away from Greyson. We play to go have breakfast at the Pancake Pantry in Nashville. I LOVE that place!
I hope you all had as good a Memorial Day weekend as we did. Blessings!

Mothers Day!

I had a great Mothers Day despite being bedridden ;-) I have had a sinus infection that has turned into a lung infection for two weeks so needless to say I've had better days BUT I still had a wonderful Mothers Day considering I have the most precious little boy and another on the way. God has blessed our family so much! Landon took care of Greyson all day and he also surprised me with roses and a shirt he knew I was wanting but didn't want to pay that much for, cause I'm super cheapwad. lol I took some time to get out of bed and in phases, I took a bath, blow dried my hair and put some makeup so I didn't look horrible in my new shirt. :) Hope you all had a wonderful Mothers Day!

Craving some Mexican!

Hygiene is important.

Oh yeah, now he's working it. :)

Ok I know that title has nothing to do with the pictures I'm about to post but since its the 5th of May, it makes sense that I am craving mexican food. Yum! Anyways, I finally found the cord to transfer some OLD pics of Greyson. I couldn't resist putting them up. It was his first time brushing his teeth (on his own).

Milestone for Greyson

Friday night I was out with a girlfriend and on my way home, my husband tells me of the nights events while he was watching Greyson. Greyson had decided to climb out of his crib and land on his head. I am sure if I had been there, I would have been even more upset over it. He is ok although for a few minutes Landon wasn't sure. Greyson was stunned and didn't use his arms for a few minutes. Finally after about 30 minutes he was back to normal. Needless to say we have been scared to leave him in his crib for fear of a repeat episode. Today we took the side off his crib and its basically a toddler bed. Being 19 months old, we're wondering where this "freedom" is going to lead tonight and several nights following but we have done lots of praying. :) We would love to hear about any experiences you all might have had with this and any advice! This will be his first night in his toddler bed, or maybe on the floor....

8:30pm Update: Wow tonight went really great actually. We put him in bed at his regular bedtime, 7pm. We put a babygate up at his door so he couldn't get out since he knows how to open doors with no problem. He never cried but he opened his door up several times and we just put him in his bed each time and after 45 minutes we heard no more noise so we waited awhile before we went in his room. Well actually I couldn't get in his room cause he had fallen asleep at the door and it would only open about 2 inches. I had to wake him up to get in but he went right to his bed and has been asleep ever since. I am so proud! Now we can only hope each night after this is as good or better :) I think he just likes his freedom so much that he doesn't want us to put the side back on the crib! lol I love our little boy so much!

Baby # 2 on the way!

God has decided to bless us with another life in our family. I found out I am pregnant last Tuesday and am due around Christmas time. We are so excited! Greyson doesn't understand yet but I am sure he will be curious when the new baby gets here. I haven't had any symptons except for being very tired so thank goodness no morning sickness yet! Please keep me and the new baby in your prayers! We are praying for a healthy Toxemia free pregnancy this time :-)

Love,
Kathrine

In love...

Here is a picture of the best gift Landon has ever gotten me: My new Wolfgang Grain Mill! It mills fresh flour from wheat berries and it does it beautifully. I know you're making fun of me right now that I would get so excited about something like this. Ha but I love it! Did you know that flour loses 90% of its nutrients within 3 days of being milled? So this fresh is definately much healthier and it tastes better too! So if anyone wants to try some out, let me know. I have white or wheat berries that I can grind for you to try.

New recipe!

I tried a new recipe tonight and wanted to share it. (Landon just saw that I was posting a picture of it and called me a nerd btw) Its called Black Bean Veggie Burgers. I made homemade buns and put spinach, mashed advacado and monterey jack cheese, they were awesome! Here's the recipe...
1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs

DIRECTIONS
If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. In a medium bowl, mash black beans with a fork until thick and pasty. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans. In a small bowl, stir together egg, chili powder, cumin, and chili sauce. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

Here's the hamburger bun recipe (can be used for hot dog buns too)

1 cup water 1 egg 2 cups all-purpose flour 1 cup whole wheat flour 3/4 teaspoon salt 1/4 cup shortening 3 tbsps sugar or honey3 teaspoons yeast 1 tablespoon vital wheat gluten (optional)
Directions
1Place all ingredients in bread pan, select Dough setting, and press Start. (Vital Wheat Gluten is optional but the bread will rise higher with it.).
2When dough has risen enough, the machine will beep. Remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into a 12-inch rope. 3With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
4Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled.
5Preheat oven to 400°F Bake 10 to 12 minutes until golden brown (be careful mine cook pretty fast). Remove from oven and cool on racks. When ready to use, split buns horizontally. These will keep in plastic bag in the freezer for 3 to 4 weeks.

Thankful still!

Wow a lot has changed here lately. Its been so busy because we have moved into a new rental house. We're busy painting and chasing a toddler and unpacking and chasing dogs and unpacking some more. We still have painting to be finished before we can decorate which I am excited about of course! the decorator in me is ready to explode! We really like our rental house and it works better than our last because now we can keep the dogs outside where they won't bother our allergies so much. I am thinking its a possibility that alot of Greyson's constant runny nose and cough could be due to the dogs in the house (they shed ALOT) so hopefully with them being outside, Greyson's health will improve! Of couse the doggies still get lots of love :)
Landon found out today that their hours got cut at work and all incintive and bonus programs were cut. Basically its about a 25% paycut when you add it all up. Pretty major for our budget! BUT God always provides and this is just another area we have to give to him. He is always faithful to those who trust and love Him. I have seen him shower blessings on our family in big and small ways lately and I believe that will continue despite the paycut. There are so many others who have completely lost their jobs so we have much to be thankful for. We pray that things improve for everyone soon! I hate seeing others struggle so much when they have little ones to take care of.
I hope all is well with you guys!
Love and blessings,
Kat

My first catering job!!!

Well I just finished my first real catering job! It was a lot of fun and I finally got paid for what I make instead of me just eating them and gaining weight, lol. I made close to 200 organic chocolate chip cookies and 2 big batches of organic dark chocolate brownies for my chiropractors office. They were having a special event and since I've brought them lots of treats before, they liked what they tasted. Anyways, I hope one day I can start my own business doing this. I forgot to take pictures though!

Death brings sadness

Landon's grandfather died last night at 6:58pm. Almost 90 years old and lives in North Dakota. His son (Landon's Dad) was with him. Landon bought his plane ticket day before yesterday which leaves on Friday and hoped to get there before he passed. At least he and his brothers will all be there for the funeral. Its just so sad because Landon hadn't seen him in over 8 years and Greyson and I have never met him. I wish we would've taken the time to make a trip up there. You never realize how important some things are until its too late. I hope I never have regrets like this with those I am closest to.

Please keep Landon and his family in your prayers. Thanks.

God bless,
